Grilled U.S. Farm-Raised Catfish Fillets with Summer Garden Succotash

Grillin and Chillin is what we’ve all dreamed about as it seemed the “Spring Showers” would never end. So, I’ve gotta be honest, my diet has long awaited the chance to get back to eating healthy and seeing the vibrant colors of summer vegetables arriving at produce stands.

Over the last 20 years my main arsenal in protein preparation has been my grill. But, not until the introduction of U.S. Farm-Raised Catfish and cooking veggies with foil have I truly advanced my culinary skills. Yes, I still love the indoor pasta and stir fry dishes but I am no longer afraid of the word “fish” and “at home”. Add to that confidence, the simplicity of oil, butter and seasonings in a foil pouch full of summer veggies and, Viola!
