U.S. Catfish Recipe of the Month: Oven-Roasted Catfish with Grape Tomatoes

Ingredients

• 4 U.S. Farm-Raised Catfish fillets
• 1 lemon, sliced thin
• 2 tablespoons olive oil
• 1⁄2 teaspoon red pepper flakes
• Salt and pepper
• 1 cup grape tomatoes, cut in half
• 2 shallots, sliced
• 2 tablespoons capers
• 4 cloves garlic, thinly sliced
• 1⁄2 cup pine nuts, toasted

Instructions

1. PREHEAT oven to 425° F.
2. LAYER catfish and lemon slices in a shallow baking dish.
3. DRIZZLE fillets with olive oil; season with dried red pepper flakes, salt and pepper.
4. TOP with grape tomatoes, shallots, capers and garlic.
5. BAKE for 20 minutes; top with toasted pine nuts.
