U.S. Catfish Recipe of the Month: Catfish with Pesto Cream Sauce

Ingredients

• 2 U.S. Farm-Raised Catfish fillets
• 1 teaspoon vegetable oil
• Salt and pepper to taste
• 3.5 ounces pesto sauce
• 1 cup heavy cream
• 3 cups cooked pasta

Instructions

1.HEAT a large nonstick skillet over medium-high heat. COAT the catfish lightly with oil, and season with salt and pepper. PAN SEAR the fillets for 3 minutes per side. REMOVE fish and set aside.
2. REDUCE heat to medium low. ADD pesto sauce and cook for 1 minute. ADD cream and bring to a simmer. ADD cooked pasta and catfish to sauce.
3. SERVE and garnish with fresh basil.
