U.S. Catfish Recipe of the Month: Catfish + Crawfish Toast

Ingredients

• 4 U.S. Farm-Raised Catfish fillets, seasoned, cooked and flaked
• 1 cup crawfish tails
• ¾ cup mayonnaise
• 1 clove minced garlic
• ¼ cup green onions
• 1 ½ cup mozzarella cheese, shredded
• 1 teaspoon Worcestershire sauce
• 1 tablespoon kosher salt
• ¼ teaspoon freshly ground black pepper
• 2 small loaves of French bread, cut in half lengthwise
• ½ cup cheddar cheese, shredded
• Green onions for garnish

Instructions

1. PREHEAT the oven to 350° F.
2. MIX the first nine ingredients together in a bowl.
3. PLACE the bread on a sheet tray, and spoon the mixture onto the slices of French bread.
4. BAKE for 10 minutes.
5. REMOVE from oven and top with cheddar cheese.
6. CONTINUE to cook for 5 minutes or until golden brown.
7. LET cool slightly before slicing into individual portions.
8. GARNISH with sliced green onions, and serve on a platter warm.
